Ingredients:
Roll Ups:
- 12–16 slices deli turkey
- 1 box stuffing mix (like Stove Top), prepared
- 1½–2 cups turkey or chicken gravy
- ½ tsp black pepper
- ½ tsp dried thyme (optional)
Mashed Potatoes:
- 2 lbs potatoes, peeled & cubed
- 4 tbsp butter
- ½–¾ cup milk or cream
- Salt & pepper to taste
Topping (optional but
):
- Crispy fried onions (like French’s)
- Extra gravy for serving
Instructions:
1. Prepare stuffing
- Make stuffing according to package directions
- Let cool slightly so it’s easy to handle
2. Make the roll ups
- Lay out turkey slices
- Add a scoop of stuffing to each
- Roll up tightly and place seam-side down in a baking dish
3. Add gravy
- Pour gravy evenly over the rolls
- Sprinkle pepper and thyme
4. Bake
- Cover with foil
- Bake at 350°F (175°C) for 25–30 minutes until heated through
5. Make mashed potatoes
- Boil potatoes until fork-tender
- Drain and mash with butter + milk
- Season with salt & pepper
6. Assemble & serve
- Plate mashed potatoes
- Add turkey roll ups on top or beside
- Spoon extra gravy over everything
- Finish with crispy onions
Tips:
- Use thick gravy so it coats the rolls nicely
- Don’t overfill stuffing or rolls will fall apart
- Add a splash of broth to mashed potatoes for extra flavor
