Crust:

  • 2 cups (200g) blanched almond flour
  • ⅓ cup powdered erythritol or monk fruit sweetener
  • ½ cup (113g) melted butter
  • 1 tsp vanilla extract
  • Pinch of salt

Lemon Filling:

  • 4 large eggs
  • ¾–1 cup powdered erythritol or allulose (adjust to taste)
  • ½ cup fresh lemon juice (about 3–4 lemons)
  • 2 tbsp lemon zest
  • ¼ cup almond flour (or 1 tbsp coconut flour for thickening)
  • Optional: ½ tsp xanthan gum (for extra firmness)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Make the crust: Mix almond flour, sweetener, melted butter, vanilla, and salt until it resembles wet sand. Press firmly and evenly into the bottom of the pan.
  3. Bake crust for 12–15 minutes until lightly golden. Remove and let cool slightly.
