Smoked Sausage and Potato Bake

Ingredients

  • 1 lb smoked sausage, sliced into rounds
  • 1½ lbs baby potatoes, halved or quartered
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • 1½ cups shredded cheddar cheese
  • 2 tbsp chopped parsley (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Grease a baking dish or line with foil.
  2. In a large bowl, toss the potatoes with olive oil, garlic, Italian seasoning, paprika, salt, and pepper.
  3. Spread the potatoes into the baking dish and bake for 25 minutes.
  4. Remove from the oven, add the sliced smoked sausage, and stir gently.
  5. Sprinkle shredded cheddar cheese evenly over the top.
  6. Return to the oven and bake another 15–20 minutes, until the potatoes are tender and the cheese is melted and bubbly.
  7. Garnish with chopped parsley and serve hot.
