Pineapple Glazed Pork Chops
Ingredients
• 2–4 bone-in pork chops (about 1 inch thick)
• Salt & black pepper
• 1 tbsp olive oil or butter
• 4 pineapple rings (fresh or canned)
• 2 cloves garlic, minced
• ½ cup pineapple juice (from the can or fresh)
• 2 tbsp soy sauce
• 2 tbsp brown sugar (adjust to taste)
• 1 tbsp honey
• 1 tsp Dijon mustard (optional, adds depth)
• ½ tsp ground ginger (or fresh grated)
• Chopped parsley (for garnish)
Instructions
1. Season & Sear
• Pat pork chops dry and season with salt and pepper.
• Heat oil in a skillet over medium-high heat.
• Sear pork chops for ~3–4 minutes per side until golden. Remove and set aside.
2. Caramelize Pineapple
• In the same pan, add pineapple rings.
• Cook 2–3 minutes per side until lightly charred. Remove and set aside.
3. Make the Glaze
• Lower heat to medium.
• Add garlic and sauté briefly (30 seconds).
• Pour in pineapple juice, soy sauce, brown sugar, honey, mustard, and ginger.
• Simmer for 3–5 minutes until slightly thickened.
4. Combine
• Return pork chops to the pan.
• Spoon glaze over them and simmer for another 5–7 minutes, until fully cooked.
• Add pineapple rings back on top and let everything soak in the sauce.
5. Serve
• Garnish with parsley.
• Serve hot with mashed potatoes or rice, spooning extra glaze on top.
Tips
• For extra caramelization, broil the finished chops for 1–2 minutes.
• Add a pinch of chili flakes if you want a sweet-spicy kick.
• Fresh pineapple gives the best flavor, but canned works great too.
