Pickled Red Onions

Ingredients:2 medium red onions (thinly sliced)1 cup white vinegar (or apple cider vinegar)1 cup water1–2 tablespoons sugar (adjust to taste)1 teaspoon saltOptional:1 garlic clove (sliced)½ teaspoon black peppercorns½ teaspoon mustard seedsInstructions:Prepare the onionsPeel and thinly slice the red onions into rings or half-moons.Make the pickling liquidIn a small saucepan, combine vinegar, water, sugar, and salt. Heat gently until the sugar and salt dissolve (no need to boil).Pack the jarPlace the sliced onions into a clean glass jar. Add optional ingredients like garlic or spices if desired.Pour the liquidCarefully pour the warm pickling liquid over the onions until they are fully submerged.Cool and storeLet the jar cool to room temperature, then seal and refrigerate.Ready to eatThe onions are ready in about 30–60 minutes, but taste even better after a few hours or overnight.
