Okra Tomato Stew (Heart & Blood Sugar Friendly)

Ingredients
2 cups fresh okra (washed, trimmed, sliced)
2 medium tomatoes (chopped)
1 small onion (finely chopped)
2 cloves garlic (minced)
1 tbsp olive oil
1/2 tsp turmeric
1/2 tsp black pepper
1/2 tsp paprika
Salt (light, to taste)
1/2 cup water or vegetable broth
Optional: fresh parsley or cilantro
👩‍🍳 Instructions
Heat olive oil in a pan over medium heat.
Add onions and garlic; sauté until soft and fragrant.
Stir in tomatoes and cook until they break down into a sauce.
Add turmeric, paprika, black pepper, and a pinch of salt.
Add the okra and mix well.
Pour in water or broth, cover, and simmer for 15–20 minutes until okra is tender.
Garnish with fresh herbs and serve warm.
