Ingredients (makes 16 bars)
Crust:
- 2 cups (200g) almond flour
- ⅓ cup powdered erythritol or allulose
- ½ cup (113g) cold butter, cubed
- 1 tsp vanilla extract
- Pinch of salt
Lemon Filling:
- 4 large eggs
- ¾ cup powdered erythritol or allulose
- ½ cup fresh lemon juice (about 3–4 lemons)
- 1 tbsp lemon zest
- ¼ cup heavy cream or coconut cream
- 2 tbsp coconut flour (or 1 tsp xanthan gum) for thickening
Glaze:
- ½ cup powdered erythritol
- 2–3 tbsp heavy cream or lemon juice
- ½ tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch or 9×9-inch pan with parchment paper.
- Make the crust: Mix almond flour, sweetener, salt, and vanilla. Cut in cold butter until crumbly. Press firmly into the bottom of the pan. Bake for 12–15 minutes until lightly golden.
- Make the filling: Whisk eggs, sweetener, lemon juice, zest, and cream until smooth. Stir in coconut flour (or xanthan gum). Pour over the warm crust.
