- 4 medium zucchini, sliced into ¼-inch rounds
- 3–4 medium tomatoes, sliced or chopped
- 8–10 slices bacon, cooked and crumbled (reserve a little for topping)
- 2 cups shredded cheddar cheese (or mix of cheddar + mozzarella)
- ½ cup grated Parmesan cheese
- 1 small onion, thinly sliced or diced
- 3 garlic cloves, minced
- ½ cup heavy cream or full-fat Greek yogurt
- 2 large eggs
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- ½ tsp smoked paprika (optional)
- Salt and black pepper to taste

Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch glass baking dish.
- In a large bowl, whisk together heavy cream, eggs, minced garlic, Italian seasoning, garlic powder, paprika, salt, and pepper.
- Layer half the sliced zucchini in the bottom of the dish. Top with half the onion, tomatoes, and bacon.
- Sprinkle with a generous amount of shredded cheddar.
- Repeat the layers with remaining zucchini, onion, tomatoes, and bacon.
- Pour the cream-egg mixture evenly over the top.
- Sprinkle the remaining cheddar and all the Parmesan on top. Finish with a little extra crumbled bacon.
