Ingredients
- 4 low-carb or keto tortillas
- 1½ cups shredded mozzarella cheese
- 20–24 pepperoni slices
- ¼ cup grated Parmesan cheese
- ½ teaspoon Italian seasoning
- ¼ teaspoon garlic powder
- 2 tablespoons finely chopped fresh parsley or basil
- 1 tablespoon butter or olive oil
- ½ cup sugar-free or no-added-sugar pizza sauce, for dipping
- Optional: sliced mushrooms, olives, bell peppers, or a little crushed red pepper
Instructions
1. Prepare the filling.
Lay the tortillas on a clean surface. Sprinkle mozzarella over half of each tortilla, leaving a small border around the edge.
2. Add the pizza toppings.
Arrange pepperoni slices over the mozzarella. Sprinkle with Parmesan, Italian seasoning, garlic powder, and parsley or basil. Add any optional low-carb pizza toppings you enjoy.
3. Fold.
Fold each tortilla in half and press gently so the filling stays in place.
4. Cook until crispy.
Heat a large skillet over medium-low to medium heat. Add a small amount of butter or olive oil. Place one or two quesadillas in the skillet and cook for about 2–3 minutes per side, pressing lightly with a spatula.
The tortillas should become golden and crisp while the mozzarella melts completely.
5. Slice and serve.
Transfer to a cutting board and allow them to rest for 1–2 minutes. Cut each quesadilla into wedges and serve warm with pizza sauce for dipping.
Extra-Crispy Tip
For that deeply browned, pizza-like cheesy exterior, sprinkle a thin layer of mozzarella directly into the hot nonstick skillet, place the quesadilla on top, and cook until the cheese forms a golden crust. Flip carefully and repeat if desired.
Keto Tips
Choose tortillas labeled low-carb or keto and check the nutrition label, since carb counts vary considerably between brands. Also choose pizza sauce without added sugar. Pepperoni can contain small amounts of added sugar depending on the brand.
You can also skip tortillas entirely and make a cheese-crust version by cooking circles of shredded mozzarella until golden, adding pepperoni, folding them over, and cooking until crisp.
