Ingredients:
- 2 medium zucchinis
- 1 cup shredded cheese (mozzarella, cheddar, or mix)
- 1/2 cup grated parmesan (optional, for extra flavor)
- 1 egg
- 1/2 cup breadcrumbs (or flour for lighter version)
- 1–2 cloves garlic (minced)
- Salt & pepper to taste
- Italian seasoning or herbs (optional)
- Oil for frying (or baking spray)
🔪 Instructions:
1. Prep the zucchini
- Slice zucchini into thick rounds (about 1–1.5 cm thick).
- Carefully scoop out a little center from half of the slices (to make space for cheese).
2. Stuff them
- Add shredded cheese into the hollowed slices.
- Cover each with another slice to form a “sandwich.”
3. Coat
- Beat the egg in a bowl.
- In another bowl, mix breadcrumbs, parmesan, garlic, salt, pepper, and herbs.
- Dip each zucchini sandwich into egg → then coat with breadcrumb mixture.
4. Cook
Option 1: Fry (crispiest)
- Heat oil in a pan over medium heat.
- Fry until golden brown on both sides (about 2–3 min per side).
Option 2: Bake (healthier)
- Preheat oven to 200°C (400°F).
- Place on lined tray, spray lightly with oil.
- Bake 20–25 minutes, flipping halfway.
Option 3: Air fryer
- 180°C (350°F) for 12–15 minutes.

- Don’t overfill or cheese will leak out.
- Chill assembled bites for 10–15 min before cooking to help them hold shape.
