Ingredients (makes 16 bars)

Crust:

  • 2 cups (200g) almond flour
  • ⅓ cup powdered erythritol or allulose
  • ½ cup (113g) cold butter, cubed
  • 1 tsp vanilla extract
  • Pinch of salt

Lemon Filling:

  • 4 large eggs
  • ¾ cup powdered erythritol or allulose
  • ½ cup fresh lemon juice (about 3–4 lemons)
  • 1 tbsp lemon zest
  • ¼ cup heavy cream or coconut cream
  • 2 tbsp coconut flour (or 1 tsp xanthan gum) for thickening

Glaze:

  • ½ cup powdered erythritol
  • 2–3 tbsp heavy cream or lemon juice
  • ½ tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch or 9×9-inch pan with parchment paper.
  2. Make the crust: Mix almond flour, sweetener, salt, and vanilla. Cut in cold butter until crumbly. Press firmly into the bottom of the pan. Bake for 12–15 minutes until lightly golden.
  3. Make the filling: Whisk eggs, sweetener, lemon juice, zest, and cream until smooth. Stir in coconut flour (or xanthan gum). Pour over the warm crust.
  4. Bake for 18–25 minutes until the center is just set (it will firm up as it cools). Cool completely.
  5. Glaze: Whisk powdered erythritol with heavy cream (or lemon juice) and vanilla until smooth and pourable. Spread over cooled bars.
  6. Refrigerate for at least 2 hours before cutting into 16 squares.

Storage Tips

Store in an airtight container in the refrigerator for up to 7 days. These bars also freeze well — wrap individually and freeze for up to 2 months. Thaw in the fridge overnight.
